Cooking class: Japanese kaiseki dishes

Look forward to a morning exploring the pinnacle of Japan’s gourmet cuisine – kaiseki.

Make your own way to the Shinjuku district, where the day’s cooking class is led by English-speaking chefs with a deep passion for Japanese gastronomy.

Under expert guidance, you’ll uncover the secrets behind the traditional kaiseki kitchen and gain an understanding of the delicate balance of flavour, aesthetics, and technique that defines Japan’s rich culinary heritage.

During the class, you’ll prepare a selection of exquisite dishes, including the legendary wagyu beef, celebrated for its tender texture and rich, buttery taste.

You’ll also learn to create classic kaiseki specialities such as:

  • Cucumber salad (Kyuri no sunomono)
  • Sweet potato with sesame cream (Satsumaimo no gomaae)
  • Japanese omelette with dashi (Dashimaki tamago)
  • Rice with sweet-salty seaweed and pickled plum (Kombu Tsukudani no gohan)
  • Miso soup (Misoshiru)
  • Tofu roll with seasonal vegetables (Shinodamaki)
  • Japanese pancake with sweet bean paste (Dorayaki)

The class is both educational and entertaining, offering you a unique insight into Japanese culinary culture – an experience that only a handful of visitors ever get to enjoy.

Once the food is prepared, you’ll take a seat and savour the many small dishes – the delicious result of your own handiwork.

Of course, special dietary requirements are taken into consideration.
