Cooking course at the Red Bridge, Hoi An

Look forward to a morning that will delight your senses with food, culture, and an atmospheric boat trip on the Hoi An River.

Your guide for the day will meet you at Hai Café, right in the heart of Hoi An’s ancient town (98 Nguyen Thai Hoc Street), where a welcome drink awaits and you’ll be introduced to the day’s activities.

Your first stop is Hoi An’s bustling market, alive with the fragrances of fresh herbs, ripe fruits, and exotic ingredients. Stroll among the stalls, chat with the locals, and learn about the produce that will soon be starring in your menu for the day.

Afterwards, your journey will continue by boat. Step aboard the Red Bridge boat and drift gently along the Hoi An River, taking in vibrant scenes of daily life along the banks as you go.

After around 25 minutes, you’ll arrive at the Red Bridge Cooking School, where a tour of the lush herb garden awaits before you don your apron and get cooking. The class itself lasts approximately two hours, held in a relaxed yet educational atmosphere. First, the chefs will demonstrate how to prepare each dish, then it’s your turn to try your hand.

You’ll learn to prepare classic Vietnamese specialities such as:

  • Crispy pancakes filled with prawns, fresh herbs, bean sprouts, and peanut sauce (Banh xeo)
  • Seafood salad with aromatic herbs from Tra Que (Goi hai san)
  • Fresh spring rolls with prawns (Goi cuon)
  • Rice noodles with chicken, Quang Nam style (Mi quang ga)

The course also includes a brief introduction to Vietnamese culinary art and plate decoration.

Once the food is ready, you’ll sit down and enjoy the dishes you’ve prepared yourself. The lunch is rounded off with lemongrass-grilled beef skewers, freshly cooked by the chefs.

You’ll, of course, receive all the recipes to take home with you. After this tasty finale, it’s time to head back to the centre of Hoi An.

Special dietary requirements are, of course, taken into consideration.
